Soup “Thursday”: Oriental Prince, indeed

Tonight I made miso soup following these directions, and HOLY SHIT, Y’ALL!!! Best. Miso. Soup. Ever! (I used reconstituted dried shitaake mushrooms instead of bonito flakes, but that’s the only change I made to Principessa’s instructions.) Greg said it “gave the French onion a run for its money,” and they’re his absolute favorites. I think the next time I make it (there’s not even a question of *whether* we’ll be making this again – oh, we WILL), I’ll whip up a bit more broth, since I kind of overestimated how much “non-broth stuff” I needed. (Principessa Grassa was NOT kidding when she said wakame expands a TON while soaking. It’s crazy how much it expands.) I mean, it was de-fucking-licious, don’t get me wrong, but the broth to non-broth ratio could have been tweaked a smidge. Now, next time I could just use smaller amounts of non-broth stuff, but where’s the fun in that. ;)

Another note, to tell you how fucking awesome this soup is: Greg *always* tweaks soup, always. Salt here, pepper there, usually some hot sauce, occasionally some soy sauce. I got out the cock sauce and the soy sauce, and offered him the salt and pepper, and he declined all of it, because the soup was perfect as-is. Yeah. That’s a hell of a recommendation right there. Also? It honestly took like maybe fifteen minutes. Easy peasy! You NEED to make this soup. It’s definitely going into heavy rotation chez nous.

    Yeah, the wakame is insane, huh? I feel like if you didn’t drain it would just sit there in the water, getting bigger and bigger, indefinitely, taking on a life of its own until its tendrils snake across the counter, octopus-like. Or maybe not, I dunno.

      The wakame is like something from Lovecraft! I just barely covered the bottom of the bowl it was in, filled it with water, turned around, and BAM! Crazy.

      Yeah, lady! It’s dead easy and soooo good. If it wasn’t for this whole “Soup Thursday” experiment and trying new recipes every week, I’d just make this nonstop. 10-15 minutes to something we could both happily eat every day for the rest of our lives? Fuck yes!
